Crispy Shortbread Cookies. Shortbread cookies keep very well and can be frozen.
Here's the recipe:
1 3/4 cups all-purpose flour (sift before measuring)
1/4 cup cornstarch
1 cup softened salted butter
1/2 cup confectionary sugar
1 teaspoon vanilla extract
Bake at 350 degrees for 10 minutes or just until lightly browned around the edges.
